It is one of the most prestigious tea only from Taiwan due to the scarcity of the tea cultivar (white monkey) and the perfect weather condition. Description

The White Monkey

The cultivar is called “white monkey”, means the white tip on the tender buds which can only be picked with hands in certain weather condition. Even Queen Elizabeth II. was also captured by the special aroma and its vivid colors (dark, red and white) of this tea. The tea is from a tea family who owns the knowledge of tea-making for more than 100 years. The tea garden is located in Pinglin Taipei, where we found this clean, hand-picked tea.


Clean and free from chemicals

The honey fruity taste comes from the bite of the specific type of small green leafhoppers that are only being active during summertime. In order to attract them, the tea garden must be chemical-free which makes this tea even rare (the production will be less than usual farming techniques).

Tea processing

Growing in Xinzhu County, where it originates from, was made by the fourth generation of Huang’s family. They only use the tender tips to make the tea and leave it unrolled. We suggest you prepare with the glass teaware that you can observe the natural beautiful colors and shapes.

Moderate-heavy oxidant and light roasting, the aroma lasts longer than other types of fragrant oolong (like Jin-Xuan, known for its milky note)

 

 

Basic Profile: Unique and ripe fruit acidity and honey.

Lingering note: No astringency and peach plum notes.

IMPORTANT: Water quality is critical for the taste of tea. We highly recommend you use filtered water or Alkaline water (ph level >8). Read this article to know some benefits of using alkaline water on tea.

Rebrew up to 7 times per 100 to 120 ml of hot water (99-90) depends on your preference of the strength. You only need to use one to two pinches (3 grams) for each brewing.

Kong-fu cha (Chinese style):

Steeping time: at least 5 times, from 30 sec /25 sec/ 45 sec, then plus 15 sec from the fourth infusion.  — Increase the steeping time if you brew with 220ml of water and so on.

Western-style (cup brewing):

Use max 300ml (about one full teapot) of hot water and last maximum 2 infusions. 

Steeping time: 1 minute 30 seconds & 3 minutes
